Eggplant Parmesan

Why we approve: It tastes just like lasagna and it saves some carbohydrate. It normally takes a very long time to prepare eggplant parmesan at home so this is a great time saver if you are craving the taste!


We were given samples of this meal while shopping at the local TJ's and we thought - nah, there is no way this is satisfying. So we gave it a try and guess what? We were wrong. We found that this extremely delicious, flavorful, and meaty tasting Eggplant Parmesan is strongly reminiscent of a vegetable lasagna. It fills you for hours and makes you feel like you had a substantial Italian restaurant serving of Eggplant Parmesan, only it's guilt free.

It packs only 370 calories per plate and if you serve it with a side of salad topped with cheese and egg, you will get plenty of protein and unbeatable satisfaction.

Have this dish cold or warm, you will find it in the ready cool meal section of Trader Joes, next to the vegetables.

Preparation:
Take out of the package and heat in an oven at 400F for 15 minutes or follow the microwaving instructions on the package ( I personally do not use microwaves).


Variations:
One serving has 16 grams of protein.  If you are shooting for more, have eggs or cheese on the salad you pair it with. You can also brown some ground beef and make it non-vegetarian lasagna. Let your appetite be your guide!


Pros: It's really delicious and satisfying for how good it tastes.
Cons: There are small amounts of wheat and soy in this meal, so I would not have it often. It's also a little carbohydrate heavy, so I would only have it post workout.
